Cake Truffles

Just before Easter weekend, I finally made something I had been wanting to for over a year: cake truffles.  They are pretty simple to make, but do take a fair bit of time (I ended up doing them over two days).  The inside is carrot cake mixed with cream cheese frosting.  I used almond bark as the coating, and even though I've used almond bark successfully on previous occasions, I ran into some problems before getting it right (problems like overheating the almond bark and making it start to solidify instead of staying runny, or thinning it enough).  Despite the few hiccups, they were fun to make.  I'm no food photographer, but here are some pictures of them:

They were sooo good!  So good, in fact, that I will be making another batch this week for Tom's birthday on Thursday :)
